I don't think it was a rat, I've had plenty of those over the years. It seemed like something bigger, maybe a possum or a fully grown King Skink, something with enough body fat to take longer to decompose. I placed two bags under the floor as close to the source as I could, and another in the cupboard above it. It made a huge difference. I always keep three on hand now, just in case
