There could be sugar free chocolate cake in your future!
My son-in-law is diabetic, my daughter and I have been on a diet for years - AND I have a sweet tooth!
I have tried liquid monk fruit sweetener with and without stevia added, but this appealed to me because a friend uses a powdered monk fruit blend for baking.
I misread the description and thought I was getting 1 lb. - it is actually 1 oz. and is triple wrapped The only ingredient is monk fruit.
My son-in-law did not get his hopes up. Other sweeteners have erythritol, malitol, or sorbitol - all causing diarrhea and sometimes upset stomach. My friend gave me a recipe for shortbread cookies made with almond flour, monk fruit sweetener, butter, salt and vanilla. 1 1/2 cups of almond flour was one batch, I doubled the ingredients and then had to decide how much sweetener to use. This was the first time I had baked with a no calorie sweetener. The packaging says 1 oz. is equal to 350 servings. The recipe called for 1/4 cup of sweetener per batch (monk fruit/stevia/erythritol blend). I used about 1/8 teaspoon for a double batch - yes, that's 1/8 teaspoon. Granted, the recipe does not make many cookies, but at that rate my son-in-law should be able to make a lot of cookies.
Oh, did I mention that my son-in-law is a chef with 30+ years experience in all types of cooking. I was a little nervous that either he would not like the cookies, or that something would go wrong. Because the batches made a small amount (about 12 cookies each), I did not sample any. When he returned from work that night, I told him I made him cookies. He is a man of few words - after eating a couple, I asked him how they were - "DELICIOUS" he replied - that said it all.
This sweetener is very expensive at almost $20 per ounce. However, if you have someone that cannot have sugar it's worth the cost to have baked goods again.
This whole project started because my son-in-law's mother had once made him a flourless chocolate cake with almond flour (he cannot have wheat flour) and artificial sweetener. The cake was a glorious chocolate rolled log, but the sweetener came back to haunt him. This monk fruit sweetener did not - I see chocolate cake in his future!
